On May 11, 2013 at the Cowlitz Regional Conference Center starting at 5 pm we will have check in and a no-host bar and silent auction review. Then at 6 pm dinner, a Cajun buffet:
Soup and/or salad:
Red beans and rice salad –served chilled with tomato, celery, green pepper, and parsley
Red beans and Andouille soup (with celery, onion, garlic, and Cajun seasonings)
Main Entrees:
Chicken and Andouille jambalaya ~ a rich meat and rice dish served hot
Grilled Chicken and bananas with watermelon relish
New Orleans style barbecue shrimp ~ jumbo shrimp (peeled and deveined) simmered in a butter broth with regional spices
Sides:
Cornbread with hot pepper jelly served on the side
Cheese Grits ~ with cheddar cheese and scallions
Eggplant Jambalaya ~ with red and yellow peppers, onion, diced tomato and seasoning
After dinner and dessert the oral auction begins at 7 pm.
